I'm envisioning an animation where the opacity of a given layer is higher when the sound is louder. Can this be done?

You could use a switch layer for this. First animate your layer. Put it into the switch layer. Then duplicate it, say, 5 times. Set each copy to a different opacity. Name it correctly so it can react to sound level (see manual).
