Turning off enable fill, enable outline

This is probably a silly question, but I can't seem to turn off enable fill or enable outline. I have searched preferences etc. and it just doesn't seem to be possible. Help would be much appreciated.

Use the 'Select Shape' tool and click on your shape. You can then turn off the fill and outline in the Styles window.

Or are you talking about the defults... dont know that sorry.
