making an object visible and invisible
I know you can fill and outline an object on a certain frame, but how do you unfill and un-outline the obect on a later frame to make the object invisible again?

Usually, it's easier to make an entire layer invisible/visible. To do this, double-click the layer in the Layers window to bring up the Layer Settings dialog. Check or un-check the "Visible" checkbox.
Or, in the timeline, click on the Layer Visibility channel (the green horizontal line) to toggle the layer's visibility at any frame.
If you still want to make a single shape disappear at a given frame, first select it, then edit its fill and/or line color. Set the color's alpha value to 0, meaning fully transparent.
This will probably cause the shape to fade out gradually over time, so you may need to add another keyframe, or set the previous keyframe's interpolation mode to Step.
