It's actually "old" old fashioned, where they used filmed cardboard cutouts.

You can get a highres version from the United website, as well as a making of documentary. It's one of my favorites of all time!

This has been a fairly common form of animation over the years, most likely with roots going back to the works of Ray Harryhausen. Some more modernized uses of the technique include "The Spirit of Christmas" (the semi-pilot of South Park before they the switched the process to Alias Wavefront from construction paper) and the "Life with Loopy" shorts featured on Nickelodeon's "Kablaam" series back in the mid-90's. (Which are still played between shows on the Nicktoons Network today.)
