Start physics later

How do I start the physics of an object later than frame 1? For example, someone fires a cannon. I create the cannonballs and apply physics to them, which just makes them fall immediately, while still sitting "inside" the cannon. I tried "setting them down" on a non-moving object and then turning the visibility of the non-moving object off, essentially yanking it out from under the falling object. No good. The Physics settings for the falling objects aren't animatable either.

Also, what are all those keyframes for in the physics-enabled objects? In my test project, when I add physics to an object, about 200 keyframes are added for Layer translation and Layer Z Rotation. Deleting these keyframes doesn't appear to change the animation, though it spawns new seemingly random keyframes elsewhere. ????

Have you tried setting your layer to 'start asleep' in the layer settings, and then using the 'Animation' > 'Nudge Physics Object' later in your animation?

physics works by moving layers and creating keyframes ...

But then why do the physics keep happening when I delete all those keyframes?

OH!! That's kind of hidden. That's exactly what I want. The manual doesn't make that clear. Thank you!!
