Beginner Question.. Circles become hexagons

Once I animate something, smooth circular lines become angled or "blocky". For example a round eye, becomes like a hexagon. What am I doing wrong?

Is this in the OpenGL preview? Or does it look like that when even you render the circle? If it does, try dividing the circle with more points. There's a script in the menu specifically for this.
If it's just in the OpenGL preview, I wouldn't worry about it unless it's somehow affecting your ability to animate the shape accurately. In which case, adding more points would probably help here too.
If the smooth edges gradually become corners, then it sounds like you have an errant Curvature keyframe in either the regular timeline or in a Smart Bone Action.
Some screen caps would help. Otherwise, we can only guess at what you're seeing.

This should only happen if you are playing the timeline and have GPU acceleration enabled. It will not effect your final output.
