Doble click on the layer you want to turn to invisibility, and in the properties of the layer, you have a check box for the visibility that you can animate in the timeline once you turn it on. Other way, e right click on the layer, and a small short cut apeares were you turn on or off visibility.

or, keep "visibility" on and change opacity to 0...
But make sure you have "allow animated layer effects" checked!

necroposting to leave a note here in case I forget this and need to go searching:
Oh damn, making a smart bone dial that controls the opacity of layers is working really nicely. I have a 'near' and 'behind' copy of each limb's layer, and made a 6-frame smart bone that goes from 0-90º, with 0%/100% opacity keys on frames 0/3/6. The far limb's tinted darker, so it fades nicely as I fiddle with the dial to bring it over and under the body.
I've gotta make one for each limb; future me may want to consider writing (or finding?) a script to generate those opacity keys automatically.
