Can someone show me how to animate the eyes so that they turn off of the head normally? I mean so that the head turns completely to the left or the right and the eyes turn off the edge without looking too strange.

Move the eyes as the head turns until the upstage eye moves behind the head. Then you either turn off visibility for that eye or move it off screen in one frame (no interpolation).
