i figured out how to get the bones to move with head etc but when i move the head the whole body moves... any reason why?

this sounds like a "bone hierarchy"problem. The order in which you create your bones is important. If you created the head bone first then the chest and torso bones in that order, then the head bone would be parent of the chest bone. You should be able to use the re-parent tool to fix the hierarchy.
