Is there a way to remove the variable line width of an entire shape? I went a little crazy with it, and just want to go back to my nice, even width.

i guess you could use the fill shape tools, but i'm not sure though.

Yes - select all the points in the shape then use the Draw->Reset Line Width menu command.
