Guys, I could totally be missing something here. I think this is kind of a newbie question, but hopefully that means I can get an easy answer!
It seems like I can only use the swatches to select fill colors, not stroke colors??? Is that right? I feel like I am totally missing something super simple.
I would really like to use the swatches to select for both, the way you can in, say, Illustrator.

Right click to select stroke color.

Thankfully, yes you are.
With the eye dropper, shift click picks fill, shift+alt click pick stroke.
If you want to set a picked fill colour as a stroke you have to control click to save the colour and then paste it in the hex box of the colour palette.
Incidentally, all tools have some helpful hints just above the canvas when selected - all of this info is in there

Thanks guys, you helped me more than you can imagine!
I wasn't using the eyedropper, so I didn't see those hints - I was just selecting colors while using the freehand and shape tools.
